♡ Rolo rocky road recipe ♡
July 28, 2018 The alliteration in the title makes its hard to say (if you can say it 5 times in a row brownie points to You) but it’s so worth it. Since I’ve lots of time off in the holidays I’m doing lots of baking and I’m writing blogposts about it! I wish I’d shared more of what I’ve baked in the past on my blog honestly.
This recipe isn’t mine, I’m using the Tanya burr ‘rocky roads’ recipe from Tanya bakes but I’ve just added half rolos instead of marshmallows as I wanted to try something different and make the recipe more creative with a twist.
Ingredients -
- bake in a 20cm baking tin
- 150g of unsalted butter
- 350g of dark chocolate (70% cocoa solid)
- 4tbsp of golden syrup
- 250g of Maryland cookies (or your favourite)
- 75g of mini marshmallows
- 75g of rolos - Icing sugar (to dust)
Method -
1. Line the baking tin with greaseproof paper
2. Melt the butter, chocolate & syrup in a saucepan on a low heat
3. Put the cookies in a bag & crush them with a rolling pin till you had big & little chunks
4. Pour the crushed cookies & marshmellows into the chocolate mixture and mix them together
5. Put the mixture in the tin, cover with clinge film and put in the fridge for minimum of 2 hours to set.
6. Once all set, take from the fridge and remove the grease proof paper. Dust with icing sugar and cut into bars!
If anyone tries this, let me know! I loved how it turned out and though they were so delicious. I’m definitely going to make them again and I’m really excited to bake again.
