♡ day 23 - Christmas cupcakes ♡

 Tis the season to be jolly and make cupcakes. I love making cupcakes and I think after I made my Halloween cupcakes I insisted in making a Christmas approach of these. This is an activity for me and my best friend!

We love baking and especially together so why not use the festive season as a reason to bake cupcakes. The method is from bbc good foods and just changed to fit the cakes I wanted to make! The photo is from Sainsbury’s website and would be what I’d use for inspiration.


 For the cakes:
  • 110g softened butter 
  •  110g caster sugar
  •   2 eggs
  •  1 tsp vanilla extract
  •  120g self raising flour 
  • 1 tsp baking powder
  •   2 tbsp milk 

Topping:

  •  - 180g butter 
  • - 140g Icing sugar 
  •  - Christmas sprinkles 


 Method :
1. Line your muffin trays with muffin cases, and preheat the oven to 180 degrees Celsius.
 2. To make the cakes, beat the butter and sugar together until light and fluffy. Add in the eggs and vanilla extract and beat until well combined.
 3. Add the flour, baking powder and milk and whisk by hand or electric whisk slowly until the mixture is smooth with no lumps.
4. Separate the mixture equally into the muffin cases then bake in the oven for 15 minutes. A skewer should come out clean when the cakes are ready to come out of the oven.
5. Transfer the cakes onto a wire rack and allow to cool completely.
 6. Whilst the cakes are cooling, beat the butter utill smoothe and then gradually add the icing sugar.
7. Put the mixture into a piping bag and pipe the cool cupcakes and add the sprinkles on top!

 I think I could make Christmas baked goods forever, they’re a combination of my favourite season and my favourite time of the year! What’s not to love?? The cupcakes were also delicious and easy to make! They’re prefect for anyone of any baking ability.
