♡ easter cookies ♡
April 11, 2020Easter is my favourite time of the year to be bake. It’s a Holiday filled with one of the best things in the world - chocolate! I love incorporating this into my baking as there’s so much opportunities to use the beautiful chocolates and create tasty pieces.
Baking is one of my favourite things to do and I love doing it. I want to share all of my creations and these cookies are amazing - this recipe is one I go back to time and time again.
Ingredients ♡
- 200g butter
- 300g caster sugar
- 1 large egg
- 325g self-raising flour
- 100g milk chocolate
- Bag of mini eggs
- Gold glitter spray for decoration
Method ♡
1. Preheat the oven to 160 degrees and prepare a tray to bake your cookies on with greaseproof paper.
2. Start by breaking up your chocolate pieces and putting aside for later
3. Place butter and sugar in a mixing bowl and mix together till a smoothe creamy texture - It will be easier if the butter is at room temperature so either leave it out or melt it for 30 seconds in the microwave.
4. Then crack the egg and add it to the mixture untill it’s a paste like texture
5. Once it is all mixed, add the flour In gradually and mix till it forms a dough.
6. Using your hands, mix it all in - the mini eggs and chocolate. Try not to leave any bit of dough without chocolate.
7. Once mixed, make pieces as big as a little handful and put them on a baking tray.
8. Wait for 10 minutes (or maximum 12 minutes). The edges should be slightly brown. They may not look like done but once they are cold they’ll be perfect. In fact, they should be quite gooey.
9. Let the cookies cool then spray them with gold glitter !

I've done so much baking during lockdown and I think I'll have to add this recipe to my to do list! They look amazing. Definitely gonna have a look at your other recipes, spotted a rolo rocky road that looks soo good! Xx
