Easter cupcakes ♡

Hey, guys! So I though since I was baking and as an extra post, I would tell you how to make these super cute Easter cupcakes!

You guys may know but I LOVE Baking and I bake at least once a week, it's one of my favourite things to do and it makes me happy, so Easter is a perfect opportunity to make some super cute cupcakes! Hopefully, in the future, there will be more baking posts! So let's get started.

110g soften butter at room temperature
110g caster sugar
2 free range eggs
1 tablespoon vanilla extract
110g self-raising flour
1-2 tablespoons of milk

140g softened butter
280g icing sugar
1-2 tablespoons of milk

Mini eggs
Golden eggs
Malteaster bunnies
Creme eggs

1. preheat the oven to 180C and line a 12-hole muffin tray with cute cupcake liners

2. Cream the butter and sugar together in a bowl until it's pale. Beat in the eggs and add a little at a time and stir in the vanilla extract.

3. Fold in the flour using a large spoon and add a little milk until the mixture is a dropping consistency. Spoon the mixture into the cases I till there all half full

4. Bake in the oven for 10-15 minute until they're golden brown on the top. Set aside to cool for 25 minutes. Once they have cooled you can start decorating then

5. For the buttercream, beat the butter and add half icing sugar together until smooth.

6. then add the rest of the icing sugar with one tablespoon of milk, adding more milk if necessary Until the mixture is smooth and creamy.

7. Put buttercream into a piping bag with a star nozzle and pipe the buttercream using a spiralling motion on the cupcakes in a large swirl.

8. To decorate my cupcakes really all did was pipe the buttercream on then stuck the topping on, but on some I sprinkled galaxy ripples on.
