♡ Red velvet whoopie pies ♡

I love baking but I really stay in my comfort zone, I’m trying to bake new things so I tried whoopie pies! I honestly loved the taste of these and how they turned out.


 I baked these with my friend and we used her mum’s recipe, so I’m not sure where it’s from but I wanted to share it still as it was delicious and turned out well.


 Ingredients
 Whoopie pie
 - 280g pain flour
 - 50g cornflour
 - 1/4 tsp salt
 - 100g unsalted butter
 - 200g sugar
 - 1 large eggs
 - 35g cocoa powder
 - 50ml red food colouring
 - 1 & 1/2 tsp pure vanilla extract
 - 180ml buttermilk
 - 1 & 1/2 tsp bicarbonate of soda
 - 1 & 1/2 tsp white vinegar

 Cream cheese filling
 - 300g icing sugar
 - 55g unsalted butter
 - 115g cream cheese
 - 1 teaspoon of vanilla extract

 Method
 1. Preheat oven to 165 degrees and line 2 baking trays
 2. Start by sifting the flours tgether and adding the salt
 3. Cream the butter & sugar together in a mixing bowl till light and fluffy, adding the eggs then
 4. Separately, combine the cocoa powder, red food colouring and vanilla extract until they form a thick paste
 5. Once formed add to the butter & sugar mixture then add half the buttermilk in, soft the flour mixture in and add the rest gradually until all combined to form a thick consistency.
 6. Add the bicarbonate is soda & vinegar in a small bowl till dissolved and add to the mixture, mixing for a few minutes so fully combined
 7. Spoon the batter into circle shapes into the baking paper (we used an ice cream scooper) well spaced so they’ve room to rise
 8. Bake for 12 minutes and take out, leaving to cool
 9. For the filling, whip the butter till a soft and fluffy consistency. Add the cream cheese gradually then sifting the icing sugar in whilst mixing.
10. Add the vanilla extract and mix for a few minutes till fully combined
11. Spoon the mixture into one whoopie then add one onto, to form the sandwich look

 They are so much easier to make them you think! Especially 2 people doing it, they are so much better. I loved baking these and the taste was amazing.
